There's a reason fresh pasta has survived centuries of culinary evolution: it's simple, honest, and when done right, utterly unforgettable.

In Tuscany, it's also deeply personal — every family has its own way, its own touch, its own secrets.

At Podere Le Caggiole, Giacomo, Chef & Sommelier, opens the doors of his kitchen and shares those secrets with you.

This is a class where you learn by doing — hands-on, step-by-step, guided the whole way in a friendly, family atmosphere.

It begins on the panoramic terrace, where Giacomo welcomes you at his family home: Agriturismo Le Caggiole — an organic farm passed down through more than seven generations, rooted in a genuine respect for the land, the seasons, and the flavours of Tuscan tradition.

Here, before the flour hits the worktop, guests are introduced to each other — because the best meals are always shared!

Then it's into the kitchen.

The first thing on the worktop: the ingredients. Giacomo walks you through each one — why it was chosen, where it comes from, what it brings to the dish.

Local, organic, seasonal, fresh — not just a philosophy, but the starting point of everything that follows.

This is a fully hands-on class — guided by Giacomo, step by step, at your own workstation, in a small group of maximum 8 guests.

Some things deserve your full attention.

This class dedicates every minute to mastering two of Tuscany's most iconic fresh pastas — and yes, it will end sweet: preparing the famous le Caggiole's Tiramisù!

Fair warning: these will be the first three things you'll want to make when you get home.

At the end of the class, you'll sit down to a complete tasting: a Tuscan appetizer prepared by Giacomo, followed by the Pici and Tagliatelle you've made — each paired with a selected local wine — and to finish, your own Tiramisù, enjoyed on the terrace with views over the Tuscan countryside — weather permitting, of course.

At the tasting table, Giacomo presents each dish alongside its paired local wine — explaining the choices behind every pairing and giving you the tools to understand the art of food-wine matching.

Do I need any cooking experience?
None at all. The class is designed for everyone — curious beginners, passionate home cooks, and professional chefs alike. Giacomo adapts to the group.
What if I have food allergies or dietary preferences?
When booking, you can select the “Vegetarian” option. For any other need — allergies, intolerances, or specific preferences — contact Giacomo before booking at giacomo@cookingclasseslecaggiole.it. He will evaluate whether adjustments are possible and let you know in advance.
Can I book a private class for my group?
Yes. Private classes are available by reserving all 8 spots. Write to Giacomo at giacomo@cookingclasseslecaggiole.it to discuss dates and details.
I’m travelling alone — can I still join?
Yes, but please contact us before booking. We’ll place you in an already scheduled small group to make sure you have the best experience possible.
Will I receive the recipes?
Yes! At the end of the class, Giacomo will send you the recipes in PDF format via email — concise but complete, designed so that, combined with the experience you’ve just had, you’ll be able to recreate every dish at home to an excellent standard. To receive them, just send a WhatsApp message with your name and email to +39 339 810 2907 before the experience. If you’d like to take detailed notes during the class, just ask for a block notes — we’ll be happy to provide one.
How can I get the photos that Giacomo takes during the class?
The day before the experience, send a WhatsApp message with your name and email to +39 339 810 2907. Giacomo will send you the photos he took during your experience, at the end of the day.
Can I take photos or record videos or audio during the experience?
Phones and cameras are not permitted during the hands-on preparations and explanations. Giacomo will photograph the class for you.
The available dates don’t fit my schedule — what can I do?
Contact Giacomo at giacomo@cookingclasseslecaggiole.it. For private or customised experiences, we can often offer flexibility on dates and times — subject to availability. Let us know your preferences and we’ll do our best to find a solution.
How do I get there?
The farmhouse is easily reached by car, located just outside Montepulciano — a convenient stop between Florence and Rome. Many of our guests combine the class with a visit to Montepulciano Old Town and its famous historic wine cellars on the same day.
I don’t have a car — can I still reach you?
From Montepulciano, we strongly recommend booking a taxi in advance — both for the ride here and the return. Around lunchtime and in the evening, taxis are often fully booked, especially in high season. Plan ahead to avoid any issues. Note: the last stretch of road to the farmhouse has no sidewalk, so arriving on foot is not recommended.
What’s the cancellation policy?
Free cancellation up to 24 hours before the experience, minus a 10% fee to cover bank charges, transaction fees and registration fees already incurred. Cancellations within 24 hours, no-shows, or early departures: 100% of the total amount.
